TO MAKE THE SOUP

In a soup pot over high heat, add 6 cups of water, codonopsis root, and goji berries. Bring the pot to a boil, then reduce the heat to medium-low and simmer for 10 minutes. Boiling the goji berries and codonopsis root before adding the other ingredients in this dish gives them time to release their medicinal properties.

In another large pot, add water almost to the top and bring to a boil over high heat. Add the chicken and parboil for 5 minutes. Drain and rinse the chicken.

Add the chicken to the first soup pot with codonopsis root, goji berries, and ginger. Bring to a boil, reduce the heat to medium-low, and simmer for 20 minutes. Add the papaya, and simmer for 10 minutes. Add the salt and pepper, and stir.

Serve warm.
